Autumn Pancakes – a flavorful Fall breakfast!

Delicious fall flavors of cinnamon, apples, nuts, and oats meld to create a definitive taste of Fall in these Autumn Pancakes!

Apples, Cinnamon, & Oatmeal make these Autumn Pancakes a First Day of Fall tradition!


Years ago, I ran across this recipe in a large family cookbook. It intrigued me – first, because of the name, considering it is no secret how much I LOVE Autumn, and secondly, because it was such a yummy combination of flavors for a pancake! What’s not to love about apples, cinnamon, and oatmeal!

I decided to make these Autumn Pancakes to celebrate the first day of Fall. It has become a family tradition ever since!

To prove just how long our family has been eating these pancakes, here is a photo of my now 20 year old when she was barely 8 years old mixing up a batch on the first day of Autumn many, many years ago!

My kiddos have always loved to help pitch in by adding in the apples, stirring the ingredients, and even frying them on the griddle or in the cast iron skillet. The children have changed, but the method has stayed the same!

Full of Fall goodness like nuts and apples and cinnamon and oats, these pancakes are a tasty treat from ingredients you can feel good about serving your family! Just look at that yummy goodness!

These pancakes also make a wonderful snack when you have leftovers! This recipe makes enough for our family to have leftovers and honestly, with the heartiness of this pancake, it doesn’t take much to fill little tummies up!

Autumn Pancakes​

Fall flavors of apples, cinnamon, nuts, and oats!

Ingredients​

  • 1 cup oatmeal
  • 3 cups boiling water
  • 3 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 6 Tbsp sugar (I like to use sucanat)
  • 1 tsp cinnamon
  • 2 large eggs, beaten
  • 2 cups milk
  • 2 large apples (I like Granny Smith's or Honeycrisp)
  • ½ cup walnuts or pecans, chopped (optional)
  • 6 Tbsp butter, melted

Instructions​

  • In a medium bowl, pour boiling water over oatmeal and let stand for 5 minutes. Do not drain.
  • In a larger bowl, combine the dry ingredients.
  • Peel and core the apples and chop them coarsely.
  • Add apples and nuts to the dry ingredients.
  • Next, add eggs, milk, and melted butter to the dry ingredients.
  • Then, slowly stir in the oatmeal and mix well.
  • Pour 1/2 cup of batter onto a hot griddle or skillet. I like to add a bit of butter to the griddle or skillet first. Cook until bubbles form on top and then flip and cook until golden brown.
  • Serve with real maple syrup and savor the flavors of Fall!
